Ingredients:

For the Cookie Shells:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
For the Filling:

  • 1 1/2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • For the Chocolate Topping:
  • 1 cup semisweet chocolate chips
  • 2 tablespoons unsalted butter

Instructions:

Preheat oven to 425°F and line a baking sheet with parchment paper.

In a saucepan, bring water, butter, and salt to a boil. Reduce heat to low.

Stir in all-purpose flour, mixing until the dough forms a ball and pulls away from the sides of the pan.

Remove the dough from heat and let it cool for a few minutes.

Add eggs one at a time, beating well after each addition, until the dough is smooth and well combined.

Drop spoonfuls of the dough onto the prepared baking sheet, shaping them into elongated ovals to resemble eclair shells.

Bake for 20-25 minutes or until the shells are puffed up and golden brown. Remove from the oven and let them cool completely.

In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form for the filling.

Slice the cooled eclair shells in half horizontally. Fill the bottom halves with the whipped cream mixture.

In a microwave-safe bowl, melt the chocolate chips and butter together in the microwave, stirring until smooth for the chocolate topping.

Dip the filled eclair shells into the melted chocolate mixture, coating the tops.

Allow the chocolate to set before serving the delicious Eclair Cookies!

Eclair Cookies notes:

When making eclair cookies, there are a few key points to keep in mind to ensure success:

1. Choux Pastry Consistency: Achieving the right consistency for the choux pastry dough is crucial. It should be smooth, thick, and glossy, with a pipeable texture. Be careful not to overmix or undermix the dough, as this can affect the final result.

2. Even Piping: When piping the choux pastry onto the baking sheet, aim for even shapes and sizes to ensure uniform baking. You can use a piping bag fitted with a large round tip for this purpose.

3. Proper Baking: Bake the eclair cookies until they are golden brown and crisp. They should puff up during baking and have a hollow interior, which indicates that they are cooked through. Avoid opening the oven door too frequently during baking, as this can cause the cookies to collapse.

4. Cooling and Filling: Allow the baked cookies to cool completely before filling them. This prevents the filling from melting and maintains the crispness of the pastry. Use a sharp knife to slice the cookies in half horizontally for easy filling.

5. Filling Variations: Get creative with the filling! While traditional eclairs are filled with vanilla custard or whipped cream, you can experiment with different flavors such as chocolate, coffee, or fruit-flavored fillings to suit your taste preferences.

6. **Chocolate Glaze:** For a glossy chocolate glaze, melt the chocolate gently and smoothly. You can add a small amount of butter or cream to the melted chocolate for extra richness and shine.

By paying attention to these general notes and techniques, you'll be well on your way to creating irresistible eclair cookies that are sure to impress.
