7-Up Pound Cake with Glaze
Ingredients for the Cake:
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 3 cups granulated sugar
- 5 large eggs, room temperature
- 1/2 cup sour cream, room temperature
- 1/2 cup 7-Up soda
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract (optional, for extra citrus flavor)
- Ingredients for the Icing:
- 1 cup powdered sugar
- 2-3 tablespoons 7-Up soda
- 1/2 teaspoon vanilla extract
Instructions:
For the Cake:
1. Preheat your oven to 325°F (163°C). Grease and flour a 10-inch bundt pan or a tube pan.
2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3. In a large bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 4-5 minutes.
4. Add the eggs, one at a time, beating well after each addition.
5. Mix in the sour cream, 7-Up soda, vanilla extract, and lemon extract (if using).
6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
7. Pour the batter into the prepared pan and smooth the top with a spatula.
8. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
9. Allow the cake to cool in the pan for about 10-15 minutes, then transfer it to a wire rack to cool completely.
For the Icing:
1. In a small bowl, whisk together the powdered sugar, 7-Up soda (start with 2 tablespoons), and vanilla extract until smooth. Adjust the amount of soda to achieve your desired consistency (thicker or more runny).
2. Drizzle the icing over the cooled cake, allowing it to gently cascade down the sides.
