Banana cream cake recipe 


Ingredients


For the Cake

  • - 1 1/2 cups all-purpose flour
  • - 1 teaspoon baking powder
  • - 1 teaspoon baking soda
  • - 1/2 teaspoon salt
  • - 1/2 cup unsalted butter (room temperature)
  • - 1 cup granulated sugar
  • - 2 large eggs
  • - 1 teaspoon vanilla extract
  • - 1/2 cup buttermilk
  • - 1 cup mashed ripe bananas (about 2-3 bananas)


For the Banana Cream Filling

  • - 1 cup heavy cream
  • - 1/4 cup powdered sugar
  • - 1 teaspoon vanilla extract
  • - 2 ripe bananas (sliced)


For the Frosting

  • - 1 1/2 cups heavy cream
  • - 1/4 cup powdered sugar
  • - 1 teaspoon vanilla extract


Instructions


Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.


In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.


n a large bowl, cream the butter and granulated sugar together until light and fluffy, about 3-5 minutes.


 Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.


Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.


Fold in the mashed bananas.


Divide the batter evenly between the prepared cake pans and smooth the tops.

Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.


 Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and transfer to a wire rack to cool completely.


 In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.


Fold in the sliced bananas gently.

Once the cakes are completely cool, place one cake layer on a serving plate. Spread the banana cream filling evenly over the top.

 Place the second cake layer on top of the filling.


Frost the top and sides of the cake with the whipped cream frosting.

Decorate with additional banana slices or other decorations as desired.
