Ingredients

For the Marinade

  • - 1 lb beef sirloin or flank steak (thinly sliced)
  • - 1/4 cup olive oil
  • - 2 tablespoons lemon juice
  • - 3 cloves garlic (minced)
  • - 1 teaspoon ground cumin
  • - 1 teaspoon ground coriander
  • - 1 teaspoon ground paprika
  • - 1/2 teaspoon ground allspice
  • - 1/2 teaspoon ground turmeric
  • - 1/2 teaspoon ground cinnamon
  • - 1/2 teaspoon ground black pepper
  • - 1/2 teaspoon salt

For the Sauce

  • - 1/2 cup plain yogurt
  • - 2 tablespoons tahini
  • - 1 tablespoon lemon juice
  • - 1 clove garlic (minced)
  • - Salt to taste

For the Wraps

  • - Pita bread or flatbreads
  • - Sliced tomatoes
  • - Sliced cucumbers
  • - Sliced onions
  • - Fresh parsley (chopped)
  • - Pickles (optional)

Instructions

Start by preparing the marinade. In a large bowl, mix together the olive oil, lemon juice, minced garlic, and all the spices. Add the thinly sliced beef to the bowl and toss to coat thoroughly. Cover and refrigerate for at least 2 hours, or overnight for best results.

While the beef is marinating, prepare the sauce. In a small bowl, mix together the plain yogurt, tahini, lemon juice, minced garlic, and salt. Set aside in the refrigerator until ready to use.

Once the beef has marinated, heat a large skillet or grill pan over medium-high heat. Add the marinated beef slices and cook until they are browned and cooked through, about 5-7 minutes.

Warm the pita bread or flatbreads in a dry skillet or in the oven.

To assemble the shawarma, spread a generous amount of the yogurt-tahini sauce on each piece of warm pita bread or flatbread. Add a portion of the cooked beef, then top with sliced tomatoes, cucumbers, onions, fresh parsley, and pickles if desired.

Roll or fold the bread around the filling and enjoy your delicious homemade beef shawarma!
