Chilled Prestige Cake
Ingredients:
Cake:
- 4 eggs
- 1 and 1/2 cups of sugar
- 1/2 cup of oil
- 1 and 1/2 cups of milk
- 1 cup of cocoa powder
- 2 and 1/2 cups of all-purpose flour
- 1 tablespoon baking powder
- Margarine and flour for greasing
- 2 cups of shredded coconut for coating
Filling:
- 1 can of sweetened condensed milk
- 1 cup of shredded coconut
- 2 tablespoons of butter
- 1/2 cup of heavy cream
Syrup:
- 4 tablespoons of cocoa powder
- 3 tablespoons of sugar
- 2 tablespoons of butter
- 1/2 cup of milk
Instructions:
Cake:
1. In a blender, mix eggs, sugar, oil, milk, cocoa powder, flour, and baking powder until you have a homogeneous batter.
2. Pour the batter into a greased and floured 25cm x 35cm baking pan and bake in a preheated oven at 350°F (180°C) for 30 minutes or until golden brown.
3. Allow the cake to cool, then unmold and cut it in half lengthwise.
Filling:
1. In a saucepan over medium heat, combine sweetened condensed milk, shredded coconut, and butter, stirring constantly until it thickens.
2. Remove from heat and mix in the heavy cream.
Syrup:
1. In a saucepan over medium heat, combine cocoa powder, sugar, butter, and milk, stirring constantly until it thickens slightly.
Assembly:
1. Place one part of the cake on a serving dish, spread the filling on top, and cover with the other part of the cake.
2. Pour the syrup over the cake, sprinkle with shredded coconut, and cut into pieces.
3. Wrap each piece in aluminum foil and refrigerate for 4 hours before serving.
